A Surrey restaurant with two AA Rosettes has a new executive head chef, who has already launched a new seasonal menu.
The chic 1907 restaurant at Brooklands Hotel in Weybridge is now under the stewardship of Welshman Dean Williams.
His experience includes four years as executive head chef at Old Thorns Manort Hotel in Liphook as well as head chef at Silvermere Inn on the Lake, Cobham, and senior sous chef at Loseley Park, Guildford.
Dean said: “I look forward to continuing the hard work and innovation that has led to an outstanding reputation for 1907, which is so much more than a standard hotel restaurant.”
As well as guests, the restaurant welcomes non-guests and caters for events and celebrations.
Dean is joined by Italian Valentino Gentile, newly appointed as sous chef, who has spent ten years working at La Luna in Goldalming where he went from sous chef to head chef and partner.
Masterchef judge Gregg Wallace gave his seal of approval to Dean’s appointment when he hosted a recent event at Brooklands Hotel. He said: “I’ve got great confidence in the head chef at 1907. There’s a lack of frivolity and he does grown-up, confident cooking. You can see it all over the menu.”
Dean’s seasonal new menu includes nine new starters and mains and an entirely new dessert menu, using local and seasonal produce.
